Champagne Breakfast Eggs

 

Every so often we have breakfast for dinner.  I'm always looking for an egg dish.  This recipe is very easy and can be made quickly.  I halved this recipe for 2 people.

2 T. butter
18 eggs
1 t. salt
1/4 t. pepper
1 cup sour cream
1 c. milk
1/4 c. green onions (I have also used a 4 oz. can green chiles)
  1. Preheat oven to 325 degrees.
  2. Melt the butter in the oven in a 13 x 9 x 2 inch pan.
  3. Beat the eggs with the salt, pepper, sour cream and milk.
  4. Add the green onions (or green chiles) and pour into the baking dish with the melted butter.
  5. Bake for about 35 minutes or until eggs are set.
