Every so often we have breakfast for dinner. I'm always looking for an egg dish. This recipe is very easy and can be made quickly. I halved this recipe for 2 people.
2 T. butter
18 eggs
1 t. salt
1/4 t. pepper
1 cup sour cream
1 c. milk
1/4 c. green onions (I have also used a 4 oz. can green chiles)
- Preheat oven to 325 degrees.
- Melt the butter in the oven in a 13 x 9 x 2 inch pan.
- Beat the eggs with the salt, pepper, sour cream and milk.
- Add the green onions (or green chiles) and pour into the baking dish with the melted butter.
- Bake for about 35 minutes or until eggs are set.
