Strawberry Soup


This recipe makes about 6-8 servings or 4 cups total.  Serve as a first course or as a dessert.

2 c. fresh strawberries
1 c. sour cream
1 c. half and half or light cream.
1/4 c. sugar
2 T. brandy
1/2 t. vanilla
more sliced strawberries for garnish
mint sprigs for garnish
  1. Wash and hull strawberries.  Place the strawberries, sour cream, half and half, sugar, brandy and the vanilla in a blender and blend until smooth.
  2. Serve in chilled cups and garnish with sliced strawberries and mint sprigs.
