Rice Chile Verde


This serves six as a side dish.
 
1 pint sour cream
1 small can chopped green chiles, 4 1/2 ounce
salt
3 cups cooked rice
1/2 pound Monterey Jack cheese, cut  in strips
1/4 c. grated Parmesan cheese
  1. Combine sour cream with green chiles and add salt to taste.
  2. In a 1 1/2 quart baking casserole layer all ingredients except Parmesan.  First a layer of rice, then a layer of sour cream and chiles, then a layer of cheese strips.
  3. Repeat until all ingredients are used up ending with rice.
  4. Bake about 25 minutes. Sprinkle with Parmesan cheese and return to oven for another 5 minutes or until cheese is melted.
