This dish is fast and delicious.
1/4 c. all-purpose flour
2 1/2 t. Italian seasoning or oregano
1 lb. thin-sliced boneless, skinless chicken breast
2 T. olive oil
3 pints grape tomatoes
2 cloves garlic, minced
2 1/2 oz. sliced part-skim mozzarella
1/4 c. fresh basil leaves
- Whisk together flour, 2 t. seasoning and 1/4 t. each salt and pepper.
- Dredge the chicken in the flour mixture to coat.
- Heat oil in a large broiler-safe nonstick skillet over medium-high heat. Add the chicken and brown, turning until golden and cooked through, about 4 to 6 minutes. Transfer to plate.
- Heat the broiler.
- Add tomatoes and remaining 1/2 t. seasoning to skillet.
- Cook stirring, until tomatoes are broken down and becoming saucy, about 6 minutes.
- Add garlic and cook 1 minute longer.
- Remove the pan from the heat and nestle chicken in to sauce.
- Top with cheese.
- Broil chicken 6" from heat until the cheese is golden, about 2 minutes.
- Serve topped with basil.
