Skillet Chicken with Mozzarella and Grape Tomatoes


This dish is fast and delicious.

1/4 c. all-purpose flour
2 1/2 t. Italian seasoning or oregano
1 lb. thin-sliced boneless, skinless chicken breast
2 T. olive oil
3 pints grape tomatoes
2 cloves garlic, minced
2 1/2 oz. sliced part-skim mozzarella
1/4 c. fresh basil leaves
  1. Whisk together flour, 2 t. seasoning and 1/4 t. each salt and pepper.
  2. Dredge the chicken in the flour mixture to coat.
  3. Heat oil in a large broiler-safe nonstick skillet over medium-high heat.  Add the chicken and brown, turning until golden and cooked through, about 4 to 6 minutes.  Transfer to plate.
  4. Heat the broiler.
  5. Add tomatoes and remaining 1/2 t. seasoning to skillet.
  6. Cook stirring, until tomatoes are broken down and becoming saucy, about 6 minutes.
  7. Add garlic and cook 1 minute longer.
  8. Remove the pan from the heat and nestle chicken in to sauce.  
  9. Top with cheese.
  10. Broil chicken 6" from heat until the cheese is golden, about 2 minutes.
  11. Serve topped with basil.
