Our Favorite Sour Cream Banana Streusel Muffins


This photo is of the loaf version of this recipe.  You can do either.

  2 c. all-purpose flour
1 c. sugar
1 t. baking powder
1/2 t. salt
1/2 t. baking soda
1/4 t. ground cinnamon
2 eggs
1 c. sour cream
1/4 c. butter, melted
3 large ripe bananas, mashed, about 2 cups mashed
(You can add yogurt or even apple sauce if you are short of 2 cups)
 Streusel topping;
1/4 c. sugar
3 T. all-purpose flour
1/4 t. ground cinnamon
2 T. butter
  1. In a medium bowl, combine the flour, sugar, baking powder, salt, baking soda and cinnamon.
  2. In a large bowl, beat eggs, sour cream, butter and bananas.
  3. Stir in to dry ingredients just until moistened.
  4. Fill greased or paper-lined muffin cups 3/4 full.
  5. For the streusel, combine sugar, flour and cinnamon in a small bowl.  
  6. Cut in the butter.
  7. Sprinkle over the muffins.  Bake in light colored metal pans
  8. Bake at 375 degrees for 20 to 25 minutes or until firm to the touch on top.
