This photo is of the loaf version of this recipe. You can do either.
2 c. all-purpose flour
1 c. sugar
1 t. baking powder
1/2 t. salt
1/2 t. baking soda
1/4 t. ground cinnamon
2 eggs
1 c. sour cream
1/4 c. butter, melted
3 large ripe bananas, mashed, about 2 cups mashed
(You can add yogurt or even apple sauce if you are short of 2 cups)
Streusel topping;
1/4 c. sugar
3 T. all-purpose flour
1/4 t. ground cinnamon
2 T. butter
- In a medium bowl, combine the flour, sugar, baking powder, salt, baking soda and cinnamon.
- In a large bowl, beat eggs, sour cream, butter and bananas.
- Stir in to dry ingredients just until moistened.
- Fill greased or paper-lined muffin cups 3/4 full.
- For the streusel, combine sugar, flour and cinnamon in a small bowl.
- Cut in the butter.
- Sprinkle over the muffins. Bake in light colored metal pans
- Bake at 375 degrees for 20 to 25 minutes or until firm to the touch on top.
