Puffy Baked Pancake


My note on this recipe says "this is beautiful and sooooo simple." 


4 eggs
1 c. milk
1 c. flour
pinch of salt
6 T. butter, equally divided
syrup or fresh fruit and whipped cream
  1. In a medium bowl combine eggs, milk, flour and salt.  Beat well.
  2. Place two 9" pie pans.  (I use one large casserole dish).
  3. Put 3 T. butter in each pan.
  4. Put in a 450° oven for a few minutes to melt.
  5. Remove from the oven. Pour ½ of the batter (about 1 ¼ c.) in to each heated pan.  Bake 20 minutes till brown and puffy.  You may have to attach a foil sleeve to the edges if they brown too quickly.
  6. Serve immediately.  Fill with fresh fruit or sprinkle with cinnamon sugar.
