Green Olive Cheese Spread



This is so easy to make, just chop and dump and stir.  The original recipe calls for 8 oz. Kraft Old English Slices (sounds like a cheese commercial) but I use a good sharp cheddar and it works well.  Hard boiled eggs and green olives, are you kidding?  I know it sounds like an odd combination but believe me...it works.

8 oz. Kraft Old English Cheese Slices
2 T. finely chopped onions, I use red for color but you don't have to
3 T. chopped green pepper
6 jumbo pimento stuffed green olives, finely chopped
1 hard cooked egg, finely chopped
1/2 cup butter cracker crumbs, crushed
1/4 to 1/2 cup mayonnaise

  1. Shred cheese and mix all together.  Add just enough mayonnaise so that is holds together.  
  2. Place in a bowl or form into a ball.  Cover with plastic wrap and refrigerate several hours or overnight.
