Quick Acorn Squash

 
1 acorn squash
olive oil
salt and pepper
Parmesan cheese
  1. Cut off the ends of the squash.  Cut in to 3/4 inch slices.
  2. Place the slices in a rimmed cookie sheet and drizzle with the olive oil.  Toss to coat.
  3. Salt and pepper.
  4. Sprinkle with Parmesan cheese.
  5. Bake at 450° for 25 to 30 minutes or until brown and tender.
