Zucchini Bread

 3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 c. grated zucchini
2 t. vanilla
1/2 t. baking powder
2 t. baking soda
3 t. cinnamon
1 t. salt
2 c. flour
1 c. raisins, (optional)
1 c. chopped nuts, (optional)
  1. Beat eggs.
  2. Stir in oil, zucchini and vanilla.
  3. Whisk together sugar, baking powder, soda, cinnamon, salt and flour.
  4. Add to the zucchini mixture and stir well.
  5. Add raisins and nuts.
  6. Spoon in to a greased 8"x 5" loaf pan.
  7. Bake at 375 degrees for 1 hour.
  8. Cool for 10 minutes before removing.
