Rainbow Shrimp Salad

You can also make this with cooked chicken.

1 c. cleaned cooked shrimp
3 c. cooked rice
1/4 c. sliced celery
1/4 c. sliced pimiento-stuffed olives
1/4 c. chopped green pepper
1/4 c. chopped pimiento
1/4 c. minced onion
1/2 t. salt
1/4 t. pepper
3 T. mayonnaise
crisp lettuce
2 tomatoes, cut in wedges
1/2 c. French dressing
1 lemon, cut into wedges
  1. Cut shrimp in bite sized pieces.
  2. Combine shrimp, rice, celery, olives, green pepper, pimiento and onion in a large bowl.
  3. Cover and chill.
  4. Just before serving, stir together salt, pepper and mayonnaise and toss with shrimp mixture.
  5. Spoon shrimp onto lettuce and garnish with tomato wedges.
  6. Serve with French dressing and lemon wedges.
