Blue Cheese-Lemon Dressing


1/4 c. crumbled blue cheese
1/4 c. salad oil
1/4 t. grated lemon peel
1 T. lemon juice
1/3 c. sour cream
1 clove garlic, pressed
1/4 t. salt
  1. Mash cheese with fork.
  2. blend in oil and beat until smooth.
  3. Mix in remaining ingredients.
  4. Cover.
  5. Refrigerate several hours to blend flavors.
