Homemade Buttermilk Waffles


2 eggs
2 c. buttermilk
2 c. flour
2 t. baking powder
1 t. baking soda
1/2 t. salt
1/4 c. plus 2 T. shortening  
  1. Heat waffle iron.
  2. Beat eggs.
  3. Beat in remaining ingredients with rotary beater until smooth.
  4. Pour batter from a cup or pitcher onto center of a hot waffle iron.  
  5. Bake bout 5 minutes or until steaming stops.
  6. Makes about 8, 7" waffles.
