I serve this with Italian chili which is made with Italian sausage. The recipe is under Main Dishes on this blog. Great combination.
1 1/2 c. flour
1/2 c. yellow cornmeal
2 T. sugar
1 T. baking powder
1/2 t. salt
2 plum tomatoes, seeded and chopped
1/4 c. chopped fresh oregano or basil
1 c. milk
1/4 c. extra virgin olive oil
1 egg, lightly beaten
shredded mozzarella, about 1/2 cup or more
- Combine the flour, cornmeal, sugar, baking powder and salt in a large bowl.
- Add the tomatoes and oregano and toss to mix.
- Mix the milk, olive oil and egg in a medium bowl.
- Add to the flour mixture stirring until just moistened.
- Spoon half the batter in to an 8" square pan.
- Sprinkle with the mozzarella cheese.
- Pour the rest of the batter on top.
- Bake at 400 degrees for about 20 minutes or until cooked through.
