Italian Corn Bread

I serve this with Italian chile which is made with Italian sausage.  The recipe is under Main Dishes on this blog.  Great combination.
1 1/2 c. flour
1/2 c. yellow cornmeal
2 T. sugar
1 T. baking powder
1/2 t. salt
2 plum tomatoes, seeded and chopped
1/4 c. chopped fresh oregano or basil
1 c. milk
1/4 c. extra virgin olive oil
1 egg, lightly beaten
shredded mozzarella, about 1/2 cup or more
  1. Combine the flour, cornmeal, sugar,baking powder and salt in a large bowl.
  2. Add the tomatoes and oregaon and toss to mix.
  3. Mix the milk, olive oil and egg in a medium bowl.
  4. Add to the flour mixture stirring until just moistened.
  5. Spoon half the batter in to an 8" square pan.
  6. Sprinkle with the mozzarella cheese.
  7. Pour the rest of the batter on top.
  8. Bake at 400 degrees for about 20 minutes or until cooked through.
