1/2 c. butter
3 eggs
1 c. flour
1 c. milk
1 t. salt
1 t. baking powder
1 pound Monterrey Jack cheese, grated
4 c. fresh spinach, washed, dried, and torn into bite-sized pieces
- Melt butter in a 7x11 inch baking dish.
- Beat eggs and add remaining ingredients, blending well.
- Pour spinach mixture over the melted butter.
- Bake in a pre-heated 350-degree oven for 40 to 50 minutes until golden brown.
- Cool 10 minutes and serve.
