I love this recipe. It was a great day when I came home from school and this was for dinner. My mom served it over noodles but it can also be served over bread. True comfort food.
4 to 6 chicken breasts
1 small onion
2 to 3 celery stalks (with leaves if possible),
cleaned and cut into chunks
1/3 cup flour
1/3 cup butter
2 1/2 c. chicken broth
- Place the chicken breasts, onion and celery in a pot. Cover with water and simmer slowly until tender. About 1 hour.
- Blend 1/3 cup flour into 1/3 cup butter in another pot until it bubbles.
- Add 2 1/2 c. broth slowly with a whisk. Stir, stir stir. You can add 1/2 c. milk of it's too thick.
- Shred the chicken and add to the sauce.
- Serve over a slice of white bread or egg noodles or rice.
