I made this sandwich mostly because of its 5 star rating after 625 reviews. 625 people can't be wrong and wow...they were right. This is so flavorful.
1/4 c. mayonnaise
1 large clove garlic
1 T. fresh lemon juice
1/8 c. olive oil
1 cup roasted red peppers
1 small trimmed zucchini, sliced lengthwise into 4 pieces
1 red onion, sliced in to 1/4" rounds
1 small trimmed yellow squash, sliced lengthwise into 4 pieces
2 (4x6 inch) focaccia bread or any other good roll
1/2 c. crumbled feta cheese, (I used Havarti)
- In a bowl, mix the mayonnaise, garlic, and lemon juice. Set aside in the refrigerator.
- Preheat the grill for high heat.
- Brush vegetables with olive oil on each side. Brush grate with oil.
- Place vegetables on the grill. Cook until tender crisp.
- Spread some of the mayonnaise mixture on the cut sides of the bread and sprinkle with the cheese.
- Place on the grill cheese side up, and cover with foil for 2-3 minutes. This will warm and toast the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn.
- Remove from the grill and layer with the vegetables.
- Enjoy as opened faced grilled sandwiches if you wish.
