Grilled Vegetable Sandwich

I made this sandwich mostly because of its 5 star rating after 625 reviews.  625 people can't be wrong and wow...they were right.  This is so flavorful it makes me want to give up meat all together.  
1/4 c. mayonnaise
1 large clove garlic
1 T. fresh lemon juice
1/8 c. olive oil
1 cup roasted red peppers
1 small trimmed zucchini, sliced lengthwise into 4 pieces 
1 red onion, sliced in to 1/4" rounds
1 small trimmed yellow squash, sliced lengthwise into 4 pieces
2 (4x6 inch) focaccia bread or any other good roll
1/2 c. crumbled feta cheese, (I used Havarti)
  1. In a bowl, mix the mayonnaise, garlic, and lemon juice.  Set aside in the refrigerator.
  2. Preheat the grill for high heat.
  3. Brush vegetables with olive oil on each side.  Brush grate with oil.
  4. Place vegetables on the grill.  Cook until tender crisp.
  5. Spread some of the mayonnaise mixture on the cut sides of the bread and sprinkle with the cheese.
  6. Place on the grill cheese side up, and cover with foil for 2-3 minutes.  This will warm and toast the bread, and slightly melt the cheese.  Watch carefully so the bottoms don't burn.
  7. Remove from the grill and layer with the vegetables.
  8. Enjoy as opened faced grilled sandwiches if you wish.
