Vegetables in Foil Packets

4 medium potatoes, thinly sliced
2 medium red onions, cut in to thin wedges
2 medium carrots, cut in to julienne strips 
¼ c. butter, melted
1 clove garlic, minced
½ t. salt
¼ t. pepper
2 T. snipped parsley (optional)
  1. Cut six 18"x 12" pieces of heavy foil.
  2. Divide potatoes, onions and carrots evenly among foil pieces.
  3. In a small bowl stir together butter, garlic, salt and pepper.  Brush over vegetables using all of the mixture.
  4. Bring up long sides of foil and leaving space for steam, seal tightly with a double fold.  Fold short ends to seal. 
  5. Grill foil packets, on an uncovered grill, directly over medium coals for 25 minutes or til vegetables are tender.
  6. Turn packets over half way through.
  7. Serve in the foil packets for fun.
