2 medium red onions, cut in to thin wedges
2 medium carrots, cut in to julienne strips
¼ c. butter, melted
1 clove garlic, minced
½ t. salt
¼ t. pepper
2 T. snipped parsley (optional)
- Cut six 18"x 12" pieces of heavy foil.
- Divide potatoes, onions and carrots evenly among foil pieces.
- In a small bowl stir together butter, garlic, salt and pepper. Brush over vegetables using all of the mixture.
- Bring up long sides of foil and leaving space for steam, seal tightly with a double fold. Fold short ends to seal.
- Grill foil packets, on an uncovered grill, directly over medium coals for 25 minutes or til vegetables are tender.
- Turn packets over half way through.
- Serve in the foil packets for fun.
