Pico de Gallo



 I love this because it's so fresh but it does not keep more than a day.  Serve with fajitas.  This is what makes fajitas so good.

1½ cups seeded, diced tomatoes
¼ cup diced red onion
1 T. diced jalapenos
1 T. minced garlic
juice of 2 limes
2 T. cilantro, plus extra for garnish
salt and pepper
  1. Combine in a bowl an hour or so before serving fajitas and chill.
