Sour Cream Green Chile Rice


 This rice dish is easy and creamy.

1 pint sour cream
 1 small 4 ½ ounce can chopped green chilies
 Salt to taste
 3 cups cooked rice
 ½ pound Monterey Jack cheese, cut in strips or grated
 ¼ cup grated parmesan cheese

  1. Combine sour cream with green chilies and salt to taste.
  2. In a 1 ½ quart casserole layer all ingredients except Parmesan Cheese.  First a layer of rice, then a layer of  sour cream and chilies, then a layer of  Jack cheese strips.
  3. Repeat until the ingredients are used up ending with rice.
  4. Bake at 350 degrees for about 25 minutes.
  5. Sprinkle with Parmesan cheese and cook five minutes more.
