Asparagus Tomato Vegetable dish


I was served this at a dinner party and I thought it made for a pretty presentation.  The picture shows how to arrange the asparagus and tomatoes.

1 bunch asparagus spears, cleaned
two large ripe tomatoes, skinned and sliced thickly
fresh grated Parmesan cheese
oregano or Italian seasoning
  1. Cook the asparagus until tender crisp.  Season with butter or olive oil, salt and pepper.
  2. Place on a large platter arranged like the picture above.
  3. Put tomatoes on a baking sheet in a single layer.
  4. Sprinkle with Parmesan and oregano.
  5. Broil until bubbly and place on the platter.
  6. Can be served at room temperature.
