I was served this at a dinner party and I thought it made for a pretty presentation. The picture shows how to arrange the asparagus and tomatoes.
1 bunch asparagus spears, cleaned
two large ripe tomatoes, skinned and sliced thickly
fresh grated Parmesan cheese
oregano or Italian seasoning
- Cook the asparagus until tender crisp. Season with butter or olive oil, salt and pepper.
- Place on a large platter arranged like the picture above.
- Put tomatoes on a baking sheet in a single layer.
- Sprinkle with Parmesan and oregano.
- Broil until bubbly and place on the platter.
- Can be served at room temperature.
