Mashed Potatoes with Cheese, Green Onions and Bacon

Good-tastes like a restaurant baked potato with all the trimmings.

4 baking potatoes, boiled
1 ½ c. light cream
4 T. butter
½ pound yellow cheese
½ pint sour cream
¾ c. chopped green onions
6 strips bacon, fried and crumbled
  1. Peel cooled potatoes and grate or put through a ricer.
  2. Combine cream, butter and cheese in a double boiler and stir until blended.
  3. Add cheese mixture to grated potatoes and put in a casserole.
  4. This may be done ahead.
  5. Bake at 350 degrees for 30 minutes or until bubbly.
  6. Top with sour cream, onions and bacon.
  7. Bake about 5 minutes.
