Roast Beef Cooking Technique

My sister gave me this recipe for rare roast beef.  This is edge to edge medium rare. Allow 4 to 5 hours for the cooking.  
She calls it beef candy!


3 pound roast beef (sirloin tip, rump, prime rib or any boneless beef roast
Oil
  1. Rub the roast with oil.
  2. Bake on open oven rack (yes, the oven rack) in a preheated 300 degree oven for 1 hour.  Place a cookie sheet one or tow racks down to catch the drippings.
  3. Without opening the oven door, reduce the heat to 200 degrees and continue baking for at least 3 -4 hours more.
