1 cup long-grain white rice
2 cups chicken broth or water
Finely grated peel of 1 lemon
¼ cup finely chopped green onion
½ t. salt
1 T. fresh lemon juice
2 t. sesame oil
2 t. sesame seeds
- Combine the rice, broth or water, lemon peel, green onion and salt in a medium pan.
- Bring to a boil and continue boiling until the level of the liquid just covers the rice.
- Turn the heat to low, cover and cook for 15 minutes.
- Remove the pan from the heat and stir in the lemon juice, sesame oil and sesame seeds.
- Set aside 5 minutes before serving.
