Lemon Sesame Rice

1 cup long-grain white rice
2 cups chicken broth or water
Finely grated peel of 1 lemon
¼ cup finely chopped green onion
½ t. salt
1 T. fresh lemon juice
2 t. sesame oil
  1. Combine the rice, broth or water, lemon peel, green onion and salt in a medium pan.
  2. Bring to a boil and continue boiling until the level of the liquid just covers the rice.
  3. Turn the heat to low, cover and cook for 15 minutes.
  4. Remove the pan from the heat and stir in the lemon juice, sesame oil and sesame seeds. 
  5. Set aside 5 minutes before serving.
