I had this at a street cafe in California and just liked the combination and the colors. I just make a basic vinaigrette and there you have it!
Serve with pita bread.
Mixed greens, any combination
black olives, I prefer kalamata
1 small jar of marinated artichoke hearts, drained
1 cup of cooked pasta, elbow or something similar
roasted red peppers, cut in strips
- Assemble the salad ingredients and chill for at least an hour.
- Toss with the dressing and serve.
