Mashed Potatoes with Green Onions and Cheddar Cheese

These potatoes are wonderful and have been in the family for years.  I don't have a written recipe but all you basically do is mash potatoes and add chopped green onions and grated cheddar cheese then bake.

4 large red skinned boiling potatoes, peeled
milk for mashing
1 T. butter
1 cup grated sharp cheddar cheese, extra for the top
1 cup green onion, chopped
  1. Boil the potatoes until soft, about 20 minutes.
  2. Remove and mash.  Add milk to make a creamy mashed potato.  Stir in the butter.
  3. Fold in the green onions and cheddar cheese.
  4. Sprinkle the top with more cheese.  (I must have had a glass of wine because I didn't do this for the picture!)
  5. Bake at 350 degrees about 30 minutes or until heated through.
