Coconut Cream Pie


This recipe was from my Grandma Sleeth who lived in Indiana.  She was a wonderful cook and a great gardener.  
My grandparents lived in a farmhouse and had only an outhouse until I was in elementary school.

¼ c. flour
½ c. sugar
½ c. coconut
Pinch salt
1 pint milk
1 t. vanilla
2 egg whites, beaten until stiff
Baked pie shell
Whipped cream
  1. Mix flour, sugar, coconut and salt.
  2. Add milk.  Cook until thick over medium heat, stirring constantly.
  3. Add vanilla and cool this mixture.
  4. Beat 2 egg whites until stiff.
  5. Fold in to the coconut mixture.
  6. Pour into baked pie shell.
  7. Serve cold with fresh whipped cream.
