Blue Cheese Coleslaw

I prefer the Stilton Blue Cheese anytime I use Blue Cheese. 
This is a time saver with the purchased coleslaw mix.

8 bacon slices, chopped
¾ cup mayonnaise
2 tablespoons red wine vinegar
1 tablespoon honey
16 ounces purchased coleslaw mix
1 cup crumbled blue cheese

  1. Cook bacon in a large skillet until crisp.
  2. Transfer to paper towels to drain.
  3. Whisk  ¾ c. mayonnaise, 2 T. red wine vinegar, and 1 T. honey together in a large bowl.
  4. Stir in coleslaw mix, cheese and bacon.
  5. Season with salt and pepper and toss to coat.
  6. Cover and chill.
