I eat my SpaghettiOs with cottage cheese. Of course, I probably haven't eaten real SpaghettiOs's for 15 years but that's how I like them. This recipe caught my eye, and it was fun to make and great to eat. The round anelletti pasta in not easy to find. Some Trader
Joe's sell it or you can buy it online.
4 slices bacon
1/2 yellow onion
2 cloves garlic
2 T. olive oil
2-14 oz. cans tomato sauce plus 1 14 oz. can water or red wine
1/2 t. red pepper flakes
1/4 c. fresh basil, roughly chopped
salt and fresh black pepper
1-pound anelletti pasta
Parmesan cheese
Meatballs:
1 lb. ground beef
1/4 lb. ground pork
1/4 lb. ground veal
1/4 yellow onion, finely minced
1/2 cup breadcrumbs
1 egg
salt and fresh pepper
- Heat olive oil in a deep saucepan. Process bacon, garlic and onion in a food processor until finely minced.
- Slowly cook in olive oil until caramelized, about 15 minutes.
- Add the tomato sauce and water or wine. Stir in red pepper flakes and season with salt and pepper.
- Lower heat and sinner for about an hour.
- Before serving stir in the basil.
- Make the meatballs by mixing everything together with your hands.
- Form into tiny meatballs. Kids love doing this.
- Line a baking sheet with parchment paper lay the meatballs on it.
- Bake at 425 degrees for about 15 to 30 minutes, turning occasionally, until they are cooked to your liking. Before serving gently toss with the sauce.
- While the meatballs are cooking, cook pasta according to the directions.
- To serve: Drain pasta well. Toss with sauce and meatballs and sprinkle with Parmesan cheese. Serve...eat!
