Spaghetti Squash with Smoked Cheese and Chicken

Spaghetti Squash with Smoked Cheese and Chicken
1 medium spaghetti squash
1 tablespoon olive oil
1 large onion
2 medium tomatoes
2 ounces smoked mozzarella or Gouda cheese
12 ounces chicken breast cut for stir fry
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup loosely packed fresh basil leaves, thinly sliced
  1. Cook spaghetti squash by piercing several times with a knife and microwave for about 15 minutes.  Let sit and when able to handle cut in half, remove seeds and scoop out the strands with a fork.
  2. In a 12" nonstick skillet heat olive oil.
  3. Add onion.  Cook 8 to 10 minutes till tender and golden.
  4. While onions cook, dice tomatoes and cheese.
  5. Add chicken to the onion and cook throughout.
  6. Mix tomatoes, cheese, salt and pepper with hot squash.
  7. Spoon squash mixture in to bowls.
  8. Top with onion and chicken mixture.
  9. Sprinkle with fresh basil and Parmesan cheese, if desired.
