1 medium spaghetti squash
1 tablespoon olive oil
1 large onion
2 medium tomatoes
2 ounces smoked mozzarella or Gouda cheese
12 ounces chicken breast cut for stir fry
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup loosely packed fresh basil leaves, thinly sliced
- Cook spaghetti squash by piercing several times with a knife and microwave for about 15 minutes. Let sit and when able to handle cut in half, remove seeds and scoop out the strands with a fork.
- In a 12" nonstick skillet heat olive oil.
- Add onion. Cook 8 to 10 minutes till tender and golden.
- While onions cook, dice tomatoes and cheese.
- Add chicken to the onion and cook throughout.
- Mix tomatoes, cheese, salt and pepper with hot squash.
- Spoon squash mixture into bowls.
- Top with onion and chicken mixture.
- Sprinkle with fresh basil and Parmesan cheese, if desired.
