Roasted Cabbage Wedges


This sounds really strange but it actually is delicious. As far as I'm concerned, making a healthy vegetable taste great is the closest I will ever come to greatness.

1 medium head green cabbage
extra virgin olive oil
coarse salt and fresh pepper
caraway or fennel seeds, or any other herb of your choice

  1. Preheat oven to 450 degrees.
  2. Brush a rimmed baking sheet with 1 tablespoon extra virgin olive oil.
  3. Cut the cabbage into 1 inch thick rounds and place in a single layer.
  4. Brush each round with more olive oil.
  5. Bake for 12 minutes and turn.
  6. Bake another 12 minutes or until the cabbage is lightly browned.
  7. Drizzle with Balsamic vinegar if you desire.
