This sounds really strange but it actually is delicious. As far as I'm concerned, making a healthy vegetable taste great is the closest I will ever come to greatness.
1 medium head green cabbage
extra virgin olive oil
coarse salt and fresh pepper
caraway or fennel seeds, or any other herb of your choice

- Preheat oven to 450 degrees.
- Brush a rimmed baking sheet with 1 tablespoon extra virgin olive oil.
- Cut the cabbage into 1 inch thick rounds and place in a single layer.
- Brush each round with more olive oil.
- Bake for 12 minutes and turn.
- Bake another 12 minutes or until the cabbage is lightly browned.
- Drizzle with Balsamic vinegar if you desire.
