Pepper Steak

                        Tastes good...that's all I have to say.

1/4 cup oil
4 peppers, green, red or yellow or any combination, cut into 1 inch strips
1 1/2 pounds beef tenderloin or sirloin steak, cut in strips
2-3 medium tomatoes, cut in to wedges
1/2 pound mushrooms, sliced
2 tablespoons butter
1/4 to 1/2 cup sherry or dry white wine
1 large clove garlic, chopped finely
2 teaspoons oregano
salt & pepper

  1. Cook peppers in oil for about 5 minutes or until just starting to brown.  Remove.
  2. Add the steak to the pan and brown until just cooked through.  Remove.
  3. Wipe pan with paper towel.  Add butter and cook mushrooms.
  4. Return peppers and steak to the pan.
  5. Add garlic, oregano , tomatoes and wine.
  6. Salt & pepper.
  7. Heat through and serve with rice of desired.
