1/4 cup oil
4 peppers, green, red or yellow or any combination,
cut into 1-inch strips
1 1/2 pounds beef tenderloin or sirloin steak, cut in strips
2-3 medium tomatoes, cut in to wedges
1/2-pound mushrooms, sliced
2 tablespoons butter
1/4 to 1/2 cup sherry or dry white wine
1 large clove garlic, chopped finely
2 teaspoons oregano
salt & pepper
- Cook peppers in oil for about 5 minutes or until just starting to brown. Remove.
- Add the steak to the pan and brown until just cooked through. Remove.
- Wipe pan with paper towel. Add butter and cook mushrooms.
- Return peppers and steak to the pan.
- Add garlic, oregano, tomatoes and wine.
- Salt & pepper.
- Heat through and serve with rice of desired.
