1-pound small zucchini, grated and squeezed dry in a clean tea towel
1/4 cup grated onion
1 tablespoon chopped fresh basil
2 teaspoons lemon zest
1/2 teaspoon chopped garlic
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup all-purpose flour
1 teaspoon baking powder
2 large eggs, beaten
- Combine the first 7 ingredients in a medium bowl.
- Add the flour, baking powder and beaten eggs.
- Stir until just combined.
- Cook in extra virgin olive oil until brown.
- Serve immediately or keep warm in a 200-degree oven.
