Emeril's Zucchini Pancakes


 Need to eat more veggies?  Everything tastes better as a pancake.  Sprinkle with fresh grated Parmesan or drop a dollop of sour cream to complete the great taste.

1 pound small zucchini, grated and squeezed dry in a clean tea towel
1/4 cup grated onion
1 tablespoon chopped fresh basil
2 teaspoons lemon zest
1/2 teaspoon chopped garlic
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup all purpose flour
1 teaspoon baking powder
2 large eggs, beaten

  1. Combine the first 7 ingredients in a medium bowl.
  2. Add the flour, baking powder and beaten eggs.
  3. Stir until just combined.
  4. Cook in extra virgin olive oil until brown.
  5. Serve immediately or keep warm in a 200 degree oven.
