Green Fettuccine Soup
The green fettuccine noodles are a bit hard to find these days. I had to go to our specialty grocery store but it's worth the effort. This is a good pantry throw together dish for a busy day.
1- 12 ounce package spinach fettuccine
3 tablespoons olive oil, split 1 T. and 2T.
1 large onion, chopped
4 minced cloves garlic
6 cups chicken broth, fresh or canned
2 packages (10 ounce each) frozen chopped spinach
1 1/2 cups cubed cooked ham or chicken
1/2 teaspoon ground nutmeg
1/2 teaspoons salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese
- Cook fettuccine. Drain and toss with 1 tablespoon olive oil.
- In a large saucepan, heat 2 tablespoons olive oil and add onion and saute for 3 minutes.
- Add the garlic and continue to cook for 2 minutes more.
- Add stock, cover, bring to a boil over high heat.
- Add the spinach, ham, nutmeg, salt and pepper.
- Bring to a boil then reduce the heat to moderate and cook uncovered, 3 to 4 minutes.
- Stir in fettuccine and heat until heated through.
- Ladle the soup in to bowls and serve with the Parmesan cheese.
