Joe was my parent's yard man. He was a total character. He would go to the nursery dump and bring back what he called his "cripples", discarded plants from the nursery and plant them. He and his wife would make these apples every fall. I remember the great feeling I got when I saw them sitting there on the counter.
1 pound light brown sugar
1-14 ounce can Eagle Brand Sweetened Condensed Milk
2 Tablespoons butter
2 t. vanilla
1/2 cup white corn syrup
12 or more crisp apples
chopped walnuts
skewers for the apples
- Place first 5 ingredients in a large pan and cook over low heat, being careful not to burn.
- Bring to a boil and stir constantly when boiling, about 10 minutes.
- Cook until soft ball stage (230-245 degrees on a candy thermometer).
- Put apples on a skewer and dip into this mixture working relatively fast.
- Roll in chopped nuts.
- Set on waxed paper to cool.
