Classic Pimento Cheese Recipe


                                4 strips bacon
2 c. shredded cheddar cheese
2 T. fresh chives
1/4 t. smoked paprika
 1 (2 ounce) jar pimentos, drained
1 (8 ounce) package cream cheese, softened
1/4 c. mayonnaise
1/4 t. garlic powder
1/4 t. salt
  1. Fry the bacon until crisp, drain and crumble.
  2. Combine all of the ingredients except the pimentos with a hand mixer.
  3. Stir the pimentos into the cheese until just combined.
  4. Refrigerate the pimento cheese until ready.  Serve with sturdy crackers.
