- Whisk 1 c. confectioners' sugar, 6 T. maple syrup and 1 pinch cayenne pepper in a pie plate.
- Dip one side of 8 prepared, cooled waffles in maple glaze, let excess drip off, then place on a tray to dry, glaze side up, about 45 minutes.
- Put 4 waffles on 4 plates, glaze side up.
- Cook 12 mini turkey sausage patties until heated through; divide among waffles.
- Fry 4 eggs in a non-stick skillet over medium-high heat to desired doneness.
- Top each sandwich with 1 fried egg.
- Set remaining waffles into place, glaze side down.
