Delicious Spicy Orange Salad

I went to a farmers market and bought some wonderful blood oranges. Now what?  I pulled this recipe from the internet and thought "what the heck"?  Didn't have parsley, but who needs it?   Well, it was fabulous!  Blood oranges are hard to find but regular oranges will work just as well.  Wonderful flavors.

3 large seedless oranges
1/8 t. cayenne (I used a bit more...I like spicy)
1 t. paprika
½ t. finely chopped or pressed garlic
3 T. olive oil
1 T. red wine vinegar or sherry vinegar
salt and pepper
1/3 c. chopped parsley
12 pitted black olives, preferably imported Greek or Italian
  1. Peel the oranges, paring away all the exterior white pulp.
  2. Cut each orange into 8 wedges.
  3. Cut each wedge into 1" pieces.  Set aside.
  4. Place the cayenne, paprika, garlic,olive oil and vinegar in a salad bowl.
  5. Add salt and pepper to taste and whisk to combine.
  6. Add the oranges, parsley and olives.
  7. Toss gently to blend.
  8. Serve cold or at room temperature.
