Potaoes Supreme


My notes on this recipe reads:  great...tastes like a restaurant baked potato with all the trimmings only it's a casserole.

4 baking potatoes, boiled
1 1/2 c. light cream
4 T. butter
1/2 pound cheddar cheese
1/2 pint sour cream
3/4 c. chopped green onions
6 strips bacon, fried and crumbled
  1. Cook potatoes.  When cooled grate and place in a bowl.
  2. Combine cream, butter and cheese in a double boiler and stir until melted.
  3. Add cheese mixture to grated potatoes and put in a casserole.
  4. This may be done ahead.
  5. Bake at 350° for 30 minutes or until bubbly.
  6. Top with sour cream, onions, and bacon.  Bake another 5 to 10 minutes.
