Thanksgiving Mashed Potato Tip

This is one of my favorite Thanksgiving tips.
  Making the mashed potatoes hours 
before serving dinner saves lots of work and cleaning up.  
You won't have a double-boiler big enough but
you can fashion one by placing any pan within another pan that has water in it.
  1. Wednesday, the day before Thanksgiving, peel the potatoes and place in a pot of cold water.  Make sure water covers the potatoes.
  2. Cover and refrigerate the potatoes overnight.
  3. On Thanksgiving day, about 2-3 hours before dinner will be served, boil and mash the potatoes using your regular recipe.
  4. Place this pot in the larger pot, as seen in the picture, that has boiling water in the larger one.
  5. You may have to play with the water level to get it just right.  (Do this when the water is cold!)
  6. When time for dinner have a guest just scoop the potatoes in a serving dish.  Done.
