This is one of my favorite Thanksgiving tips. Making the mashed potatoes hours before serving dinner saves lots of work and cleaning up. You won't have a double-boiler big enough but you can fashion one by placing any pan within another pan that has water in it.
- Wednesday, the day before Thanksgiving, peel the potatoes and place in a pot of cold water. Make sure water covers the potatoes.
- Cover and refrigerate the potatoes overnight.
- On Thanksgiving day, about 2-3 hours before dinner will be served, boil and mash the potatoes using your regular recipe.
- Place this pot in the larger pot, as seen in the picture, that has boiling water in the larger one.
- You may have to play with the water level to get it just right. (Do this when the water is cold!)
- When time for dinner have a guest just scoop the potatoes in a serving dish. Done.
