1 1/2 pounds sweet potatoes
2 pounds winter or acorn squash
4 tart apples
3/4 t. salt
1/4 t. fresh ground pepper
1/3 c. apple cider
1 c. maple syrup
4 T. butter
- Peel potatoes and cut into chunks or slices, about 1"x2".
- Place on a saucepan, cover with water and simmer for 15 minutes.
- Drain and reserve.
- Preheat oven to 375°.
- Peel and seed the squash. Cut into thick chunks or slices about the size of the potatoes.
- Pare, core and quarter the apples.
- Butter a large shallow pan.
- Arrange everything in the pan.
- Salt and pepper.
- Pour cider then syrup over all.
- Dot with butter.
- Bake 40 minutes, basting every 10 minutes.
