Maple Baked Squash, Potatoes and Apples


1 1/2 pounds sweet potatoes
2 pounds winter or acorn squash
4 tart apples
3/4 t. salt
1/4 t. fresh ground pepper
1/3 c. apple cider
1 c. maple syrup
4 T. butter
  1. Peel potatoes and cut into chunks or slices, about 1"x2".
  2. Place on a saucepan, cover with water and simmer for 15 minutes.
  3. Drain and reserve.
  4. Preheat oven to 375°.
  5. Peel and seed the squash.  Cut into thick chunks or slices about the size of the potatoes.
  6. Pare, core and quarter the apples.
  7. Butter a large shallow pan.
  8. Arrange everything in the pan.
  9. Salt and pepper.
  10. Pour cider then syrup over all.
  11. Dot with butter.
  12. Bake 40 minutes, basting every 10 minutes.
