Apple Cake


Serve this from the oven on a chilly October evening.  
Good ala mode, too. 

1/2 c. butter
1 c. sugar
3 eggs, yolks and whites separated
1 1/2 c. flour
3/4 t. baking soda
1 t. cinnamon
1 t. nutmeg
3 c. pared apples. finely diced
1 c. brown sugar
3 egg whites, stiffly beaten
1/2 c. chopped walnuts
1/2 c. flaked coconut  
  1. Cream the butter and sugar until together until fluffy.
  2. Add the egg yolks and blend.
  3. Sift together the flour, baking soda, cinnamon and nutmeg.
  4. Add to the creamed mixture and mix well. Batter is very stiff.
  5. Stir in 3 c. pared apples.
  6. Press batter evenly into greased 13" x 9" pan.
  7. Gradually beat 1 c. brown sugar in to the beaten egg whites.
  8. Fold in the walnuts and coconut.
  9. Spread over batter.
  10. Bake at 350° for about 40 minutes.
