Serve this from the oven on a chilly October evening.
Good ala mode, too.
1/2 c. butter
1 c. sugar
3 eggs, yolks and whites separated
1 1/2 c. flour
3/4 t. baking soda
1 t. cinnamon
1 t. nutmeg
3 c. pared apples. finely diced
1 c. brown sugar
3 egg whites, stiffly beaten
1/2 c. chopped walnuts
1/2 c. flaked coconut
1/2 c. butter

- Cream the butter and sugar until together until fluffy.
- Add the egg yolks and blend.
- Sift together the flour, baking soda, cinnamon and nutmeg.
- Add to the creamed mixture and mix well. Batter is very stiff.
- Stir in 3 c. pared apples.
- Press batter evenly into greased 13" x 9" pan.
- Gradually beat 1 c. brown sugar in to the beaten egg whites.
- Fold in the walnuts and coconut.
- Spread over batter.
- Bake at 350° for about 40 minutes.
