baking potatoes
melted butter
2 large cloves garlic, chopped finely
grated fresh Parmesan cheese
salt and pepper to taste
- Bake potatoes about 45 minutes (do not peel).
- Remove from oven and cut in half lengthwise, then cut each half in two, crosswise.
- Melt butter in a small pan with the chopped garlic.
- Set all skin side down in shallow pan, brush with melted butter.
- Return to oven until browned (45 minutes). Add more butter as the spirit moves you.
- Just before done, sprinkle on Parmesan cheese and return to the oven for 5 minutes more.
- Eat with your fingers. Good with summer cook out steaks, burgers etc.
