My family always made this when I was a kid. My mom used thick slices of mozzarella. It was heavy so I would make it with less cheese and make sure you go easy on the garlic butter.
1 loaf French or Italian Bread
1/4 stick butter with 1 pressed clove garlic, melted together
4 large ripe tomatoes
1/2 t. oregano
dash paprika
shredded mozzarella cheese
salt and pepper to taste
- Slice bread lengthwise, spread with garlic butter.
- Place under the broiler until golden.
- Slice tomatoes 1/8" thick.
- Sauté in garlic butter for a short time.
- Place tomatoes on the bread.
- Sprinkle with cheese and a little paprika.
- Broil until the cheese is just melted.
- Cut in to bite sized pieces.
