I have a warm memory of sharing this muffin with my dear friend Neil when he came to visit us. He has since passed away but I remember the look on his face when he took a bite of the warm muffin right from the oven. He was a bachelor and not a cook.
2 c. flour
½ c. sugar
4 t. baking powder
½ t. salt
½ t. cinnamon
¼ t. nutmeg
1 ½ c. applesauce
1 egg
¼ c. melted butter
Topping:
3 T. sugar
¼ t. cinnamon
¼ t. nutmeg
¼ c. melted butter, to dip the top of the muffin in.
- Stir together flour, sugar, baking powder, salt, cinnamon and nutmeg.
- Mix applesauce, egg and melted butter.
- Pour all at once into flour mixture.
- Stir just until moistened.
- Pour batter in muffin cups.
- Bake at 425° for 20 minutes or until golden brown.
- Combine topping ingredients together.
- Dip tops of hot baked muffins in melted butter then in the sugar mixture.
- Serve warm.
