Applesauce Muffins

I have a warm memory of sharing this muffin with my dear friend Neil when he came to visit us when we lived in California.  He has since passed away but I remember the look on his face when he took a bite of the warm muffin right from the oven.  He was a bachelor and not a cook.

Muffin:
2 c. flour
½ c. sugar
4 t. baking powder
½ t. salt
½ t. cinnamon
¼ t. nutmeg
1 ½ c. applesauce
1 egg
¼ c. melted butter

Topping:
3 T. sugar
¼ t. cinnamon
¼ t. nutmeg

¼ c. melted butter, to dip the top of the muffin in.
  1. Stir together flour, sugar, baking powder, salt, cinnamon and nutmeg.
  2. Mix applesauce, egg and melted butter. 
  3. Pour all at once into flour mixture.
  4. Stir just until moistened.
  5. Pour batter in muffin cups.
  6. Bake at 425° for 20 minutes or until golden brown.
  7. Combine topping ingredients together.
  8. Dip tops of hot baked muffins in melted butter then in the sugar mixture.
  9. Serve warm.
