Zucchini and Asparagus Strata


1/2 pound asparagus, cut into 1 inch segments
1 medium zucchini, thinly sliced
4 leftover stale dinner tolls, or 4 slices of white bread, torn into 1" pieces
1/3 c. shredded Havarti cheese
4 eggs
1 1/2 cup milk
salt
fresh ground pepper
1 T. butter, melted
  1. Preheat oven to 350°.  Lightly grease a pie pan.
  2. In a large bowl, whisk together eggs and milk.  Mix in salt and pepper.
  3. Add bread, asparagus and most of the cheese (reserve a couple tablespoons), and mix gently until bread pieces are all coated in egg mixture.
  4. Pour into pie pan.
  5. Bake uncovered for 15 minutes.
  6. Remove from oven and place zucchini slices on top.
  7. Brush with melted butter.  sprinkle with reserved cheese.
  8. Bake for another 20 minutes, or until eggs have set.
  9. Sprinkle remaining cheese on top, and place under the broiler for no more than a minute, just to brown the cheese a little.
  10. Cool slightly before serving.
