My note on this handwritten recipe says, “So good! Can be halved.” I really don’t like coconut all that much but the coconut adds a richness and interesting taste barely discernable as coconut. I love recipes that have so few ingredients but taste so good.
1 lb. softened butter
3 c. sugar
1 T. vanilla
4 c. flour
1 c. coconut
- Cream butter and sugar.
- Add vanilla.
- Blend in flour and coconut.
- Turn stiff dough onto floured wax paper.
- Knead and press together to form 2 rolls.
- Wrap in wax paper and chill 3 hours.
- Cut in ¼ inch slices.
- Bake on ungreased cookie sheet.
- Bake at 350 degrees for 15-20 minutes or until brown at the edges.
- When cool, dust with powdered sugar.
