Coconut Shortbread Cookies


My note on this handwritten recipe says, “So good!  Can be halved.”  I really don’t like coconut all that much but the coconut adds a richness and interesting taste barely discernable as coconut.  I love recipes that have so few ingredients but taste so good.

1 lb. softened butter
3 c. sugar
1 T. vanilla
4 c. flour
1 c. coconut
  1. Cream butter and sugar.
  2. Add vanilla.
  3. Blend in flour and coconut.
  4. Turn stiff dough onto floured wax  paper.
  5. Knead and press together to form 2 rolls.
  6. Wrap in wax paper and chill 3 hours.
  7. Cut in ¼ inch slices.
  8. Bake on ungreased cookie sheet.
  9. Bake at 350 degrees for 15-20 minutes or until brown at the edges.
  10. When cool, dust with powdered sugar.
