Mix:
2/3 c. sugar
1/2 t. salt
2 1/2 T. cornstarch
1 T. flour
- Stir in gradually: 3 c. milk.
- Cook over medium heat- stirring-until thick.
- Boil for 1 minute.
- Remove from heat and put a little of this hot stuff with 3 egg yolks slightly beaten.
- Mix this back into the saucepan stuff.
- Boil 1 minute more stirring constantly.
- Remove from the heat and stir in 1 T. butter and 1 1/2 t. vanilla.
- Cool.
- Stir as it cools so it doesn't form a "skin".
- Pour over bananas sliced into a baked 9" pie shell.
- Chill.
- Serve topped with whipped cream. You can add vanilla and 1 T. or so of confectioners sugar to the whipped cream.
