1 cup dried elbow macaroni
1/2 bell pepper, small dice
1 /2 large onion, small dice
1 hard boiled egg, small chop
1/4 c. shredded carrots
dried oregano to taste
vinaigrette
- Cook the macaroni as the package tells you to.
- Plunge in to an ice bath to cool and stop cooking.
- When cool, assemble the rest of the ingredients.
- Use a vinaigrette of your choice or bottled Italian dressing.
