Mom's listen up. I always made this for the bake sales at school. I would cut them into wedges and then
put individual cookies in a baggy and tie with raffia. They were always the first things sold. Taste good too.
1/2 c. butter, softened
3/4 c. brown sugar, packed
1 egg
1 t. vanilla
3/4 c. flour
pinch of salt
1/2 t. baking powder
1/2 t. baking soda
1 c. rolled oats
1/2 c. coconut, flaked or shredded
1/2 c. chopped walnuts (optional)
1 c. semi-sweet chocolate chips
1/2 c. peanut butter chips
1/2 c. M and M's
- In a medium bowl, beat together butter, brown sugar, egg and vanilla until light and fluffy.
- Add flour, salt, baking powder, baking soda, oats, beating until blended.
- Stir in coconut and walnuts.
- Spread sough evenly in a greased pizza pan.
- sprinkle with chocolate chips amd peanut butter chips.
- Bake at 350° for 13 to 15 minutes or until golden brown. (Do not under bake)
- Immediately garnish with M & M's. Position them on top of warm chocolate chips so that candies will stick.
- Cut cooled cookie pizza into wedges.
