Yes, it’s a lot of work but it’s worth it. I first had this at a bridle shower. They served it in paper Chinese food to-go containers with chop sticks. Everyone got their own container to eat from. It was fun. Why does it taste better out of the container?
¾ pound cooked chicken breast meat, cut in 1” pieces
¾ pound smoked ham, cut julienne
(I have used all chicken breast meat-1 ½ pounds)
1 ½ cup drained sliced water chestnuts
1 small head red leaf lettuce, torn
1 small head romaine, torn
1 pound fresh spinach, torn
½ cup bean sprouts
Fried Won ton wrappers:
Vegetable oil
20 Won ton wrappers, cut in to ½ inch strips
Dressing:
¾ pound smoked ham, cut julienne

Dressing:
1 green onion, chopped
1 large garlic clove, pressed
¼ cup white wine vinegar
¼ cup soy sauce
2 tablespoons sugar
1 teaspoon dry mustard
¾ teaspoon minced fresh ginger
½ teaspoon Worcestershire Sauce
¾ cup peanut oil
2 tablespoons oriental sesame oil
¼ cup sesame seeds, toasted
1 large garlic clove, pressed
¼ cup white wine vinegar
¼ cup soy sauce
2 tablespoons sugar
1 teaspoon dry mustard
¾ teaspoon minced fresh ginger
½ teaspoon Worcestershire Sauce
¾ cup peanut oil
2 tablespoons oriental sesame oil
¼ cup sesame seeds, toasted
- Make dressing and refrigerate.
- Combine chicken, ham, water chestnuts, lettuces, bean sprouts and spinach in a large bowl.
- Toss with enough dressing to coat.
- Make fried wrappers by plunging the strips in the hot oil until brown.
- Drain on a paper towel.
- Top salad with won ton wrappers and serve.
